Acorn Squash is one of the varieties of Winter Squash that I mentioned in my video Heirloom Squash with Mary
Baked Acorn Squash can be made for vegetarians and omnivores. Below I'm sharing 2 options and you can "tweak" them to your tastes.
Baked Acorn Squash - vegetarian
Ingredients:
Acorn Squash
olive oil
sea salt
black pepper
Directions:
Cut Acorn Squash in half. Optional: slice into 4. Drizzle with Olive oil. Sprinkle with salt and pepper. Optional: add crushed garlic
Bake at 400 for 55 minutes
Baked, Stuffed Acorn Squash - omnivore
Ingredients:
Acorn Squash
olive oil
sea salt
black pepper
Ground beef, cooked and drained
green onions, chopped
San Marzano tomato, chopped
cheese, shredded or grated
Directions:
Cut Acorn Squash in half. Optional: slice into 4. Drizzle with Olive oil. Sprinkle with salt and pepper. Optional: add crushed garlic
Mix ground beef, green onions, san marzano tomato and cheese in a bowl.
Stuff Acorn Squash with ground beef mixture
Bake at 400 for 55 minutes
