I love growing this amaranth, stick these beauties in a corner that you want to brighten up and this amaranth will not disappoint. I grew these in Central Florida, zone 9b and it loved the hot weather!
The seeds readily reseed themselves and you will have an ongoing supply of amaranth leaves.
Leaves are great for salads and can be cooked like greens as well. The seeds can be popped like popcorn, even though the seeds are tiny. The seeds are easily harvested when you when you put a bag or old pillow case around the flowerhead, then thresh it to beat the seeds loose. You can use a small fan at low speed to get the little blossoms out of the seeds.
Note that amaranth is not deer resistant, even though it is not really an issue because amaranth grows fast. Because this amaranth is tall, it should be shielded from strong winds because the flower heads are top-heavy. Topping and picking the flowerheads promotes branching and bushing out. I think one could use the flowers as a natural food dye as well.
