Here are a few heirloom varieties that I love:
Luffa can be harvested very early and eaten like a squash OR let it grow very ripe to harvest as a Luffa Sponge
This is a super spicy green. Harvest leaves when they're small, medium or large. These are great fresh or cooked!
Also known as Patty Pan squash. These can be harvested small or large. The larger squash is great for stuffing.
Glass Gem is a hardy, jewel-colored heirloom corn that can be used as a popcorn OR dried and ground for cornmeal.
Heavy yields and sturdy plants make this an all around favorite.
